This recipe uses Vitafiber, which is isomalto-oligosaccharide syrup and a main ingredient in the popular Quest bar. It gives a soft texture, binds ingredients, and has very very low net carbs, as it is almost entirely fiber.

Ingredients per batch of 3:

50g Vitafiber

1 tbsp maple syrup (I used Walden farms no calorie syrup)

1 tsp vanilla extract

1.25 scoop Select Snickerdoodle Protein

1 tsp nutmeg

1 tsp ginger

1 tsp cinnamon

1 tsp allspice

Directions:

Prepare all of your ingredients minus the Vitafiber in a small bowl together

Place all the Vitafiber into a small pan and heat it until it is bubbling on the stove top

Pour the bubbling syrup into the bowl and immediately stir everything together until uniform

Invert the bowl over some parchment of wax paper and wrap it up and compress it together into the shape desired, of course you should plan ahead here with your own cookie cutter to maximize cookies/batch

Refridgerate for about 40 minutes

Preheat your oven to 250 and place them on a greased cookie sheet

Bake for 10 minutes and check on them, re-check until bottom is lightly browned/stiffened
